HEALTHY ZESTY ORANGE CHICKEN

 

Every so often you find yourself looking to bring zest into every area of your life. It's the simple choices that can add a little flare and flavor into your daily life that keeps us inspired, curious and showing up for long term intentions. 

We love the idea of taking classics and bringing them forward in contemporary ways with new knowledge that may support our overall health. On daily walks, I pause and shoot photos of the local citrus trees and find myself craving an old school classic, orange chicken. 

After several attempts, we found the perfect combination. It's hearty nature without feeling to heavy in the summer heat, this is a fresh and bright meal that is family friendly or the perfect go to lunch on the go. We took it into our new creative studios and found that it was delicious to reheat for a meal prep idea.

YIELD: Serves 4

INGREDIENTS

Chicken

1 ½ pounds boneless chicken breasts, cut into cubes
1 egg white
1 tablespoon tamari or soy sauce
1 tablespoon orange zest
black pepper (to taste)
⅓ cup cornstarch
avocado oil

Orange Sauce

⅓ cup low sodium chicken broth
1 cup fresh orange juice + 2 tablespoons zest
⅓ cup tamari or soy sauce
2 tablespoons rice vinegar
1 tablespoon honey
½ large white onion
½-1 teaspoon chili flakes
2 tablespoons toasted sesame seeds
green onions and sesame seeds, for serving

INSTRUCTIONS

In a bowl, combine the chicken, egg white, tamari/soy sauce, orange zest, and pepper. Toss well to coat.

In a separate bowl, add the cornstarch.

Dredge the chicken through the cornstarch to coat.

In a glass measuring cup or jar, whisk together the broth, orange juice, tamari/soy sauce, rice vinegar, and honey.

Heat a thin layer of avocado oil in a large skillet over medium heat.

Add the chicken, working in batches, cook until golden all around, about 5 minutes. Remove the chicken from the skillet.

To the skillet, add the onions and chili flakes. Cook 1-2 minutes. Pour in the orange sauce. Bring to a boil, boil 3-4 minutes, then add the chicken. Toss with the sauce and cook until the sauce thickens around the chicken, about 5 minutes.

Serve the chicken and sauce topped with sesame seeds and green onions over steamed rice and a side of vegetables.
